The Meal | 1 Hour

Can’t go wrong on game day. Go birds.

Prep:

  • Stick a 16+ oz ribeye in the freezer for 30-45 minutes

  • When the steak is very cold (but not frozen), take it out and slice it extremely thinly across the grain

  • Season the steak with salt, pepper, onion powder, and garlic powder

  • Wash, dry, then thinly slice 1 lb of mushrooms

  • Dice 1 small onion

  • Mince 3 cloves of garlic

  • Slice hoagie rolls down the middle (get fresh sub rolls from the bakery section of the store). Use your fingers to pull out some of the bread from the middle of the rolls, making “canoe” shapes. Butter the insides of the rolls heavily

    Cook:

  • Toss the shrooms in a non-stick pan with a pad of butter and let them cook for 10-15 minutes over medium heat, stirring occasionally. You’ll be adding in onions halfway through

  • Add onions and garlic to the pan with the mushrooms after 5 minutes of cooking the mushrooms. Stir up and add in a squirt of olive oil if the pan is dry. Salt and pepper the mixture

  • Add in a few dashes of soy sauce after they have given off their water and shrunk up and browned. Remove from the heat

  • Heat a griddle or large cast iron pan over high heat while the mushrooms are cooking. Add a bit of neutral, high smoke point oil into the pan. Once shimmering, add in the beef to sear. Should take ~3-4 minutes on the first side. It will be ready to flip when it has gained streaks of dark brown crust

  • Flip the beef and cook another 2-3 minutes. A little pink remaining is okay. You don’t want to overcook.

  • Bring the steak to a cutting board and cut into small pieces

  • Add the steak back to the pan and add the mushrooms and onion on top

  • Cover with plenty of provolone cheese

  • The cheese should melt quickly. If it doesn’t, you can add a handfull of water onto the pan and immediately cover. It will fill with steam and melt the cheese

  • In the man where the mushrooms mix was, brown the sub rolls face down over medium-low heat.

  • Add mayo on to the toasted rolls and fill with the meat, mushies, and cheese

    Options:

  • Add on tomatoes, shredded lettuce, and/or sliced bell peppers

  • Cheez-wiz if ya nastay
